What is a good minimum number of years I should plan to stay in my home before selling?

There's no standard answer for this question. It's going to vary depending on each home buyer's situation. There are lots of factors to look at here and the most important one as of today is the real estate market.
I would suggest that if you are planning on purchasing a home in the very near future, that you consider how slow the market is moving in your area. While some areas of the country still have more homes listed for sale than there are willing buyers, some areas are starting to improve. What is local your market doing?
Hear in the Virginia Beach area, we have a large military presence to keep our market moving, although we do have a lot of homes in our inventory.
I would suggest to any potential buyer in the Virginia Beach or greater Hampton Roads area that they should only buy a home if they plan on staying in it for at least three years. Although I cannot predict the real estate market, I think this will give the market here enough time to level off and give homeowners the ability to once again start building some decent equity in their homes.
